Tofu, rice, and carrot salad

I vaguely remembered having tofu prepared like this when I was little.

For one serving, it's half a 12.3 oz. cake of extra firm silken tofu. It comes in these handy aseptic packages. I cut my serving into 12 bite-sized pieces. The half cake of tofu is about 100 calories.

Topped with hana katsuo (dried bonito fish flakes) and soy sauce.

The carrot salad is just a shredded carrot and daikon, scallion, with Annie's Asian Sesame dressing.

The rice is topped with nori fumi furkake.

This was delicious, and healthy!

I switched to cutting the carrot into matchsticks instead of shredding it. There's a lot of waste when shredding a single carrot into long strips.
