Fried rice

This is more or less Mom's recipe for fried rice, which apparently I never wrote down before. This is a much smaller recipe than she would make.

The basic ingredients are:

Cook the sausage for several minutes.

Push to the side and add the carrots and cook for a few minutes.

Add the green peppers and cook for a minute.

Add the cabbage, mushrooms, and bacon and cook for several minutes.

Add rice and cook until reheated.

Add freshly ground black pepper and soy sauce to taste.

If using the scallions and egg, add right at the end of cooking. The egg ribbons could be added after plating as well.

I eat about a 4.5 oz. serving, which is less than half of Mom's serving size. Thus this amount made 3 meals for me. I vacuum sealed and froze the leftovers, and it reheats well in the sous vide or boil-in-bag.

I later switched to a 6.0 oz. serving.

Made a batch today with rice, sausage, bacon, green pepper, carrot, cabbage, and scallions. Mise en place:

Cooked vegetables.

With added rice.

I then realized that I forgot the cabbage! I cut and cooked a little cabbage in a separate pan.

And added it to the fried rice. Now it looks correct!

I could have made a bigger batch as I only ended up with 10.6 oz. I had a bit less cooked, cooled rice than I thought I did.

I still had two servings, one for dinner today and one frozen for later.

I made this again. I prepped the vegetables in the morning so cooking it for dinner will just be combining the items in the pan.

Pre-cooked the sausage when I prepped the vegetables. This wasn't really necessary but it makes assembly a little easier.

Vacuum sealed and froze one serving (7.3 oz).
