Roasted pork #3
I made a 3.68 lb. bone-in pork loin roast. This is not always available in the grocery store, but I like to make it at least once per winter when I see it.
This is it out of the package.
There's a layer of fat that can be mostly removed.
Season with salt, freshly ground pepper, garlic powder. Put in a roasting pan on a rack with 8 oz. of water. You'll probably need to add more water later. I set the probe alarm to 150°F but probably could have made it a few degrees lower.
Roast at 400°F.
Done! I forgot to record how long this took, but it was at least 90 minutes, probably more.
Transfer the liquid in the roasting pan to a sauce pan. Add a couple chunks of pineapple for each serving. Add a little juice, and more soy sauce to taste. Bring to a boil.
Pineapple separated from the jus.
I ate one serving, and vacuum sealed and froze 5 more servings.
And 3 servings for stir-fry.
That was quite a bargain for $ 5.22!
