Salmon BLT

This was good! I used to get this frequently at the Highway 7 Bar and Grill in Bainbridge, NY, before it closed.
It's just a salmon filet. I used a skin-on Atlantic salmon fillet, frozen and cooked in a sauté pan.
With bacon (previously cooked), lettuce, tomato, on a bulkie roll with mayo.

Here are some pictures of preparing this meal.
I cooked the salmon earlier in the day and refrigerated it.

When it was time to make the meal, I microwaved the salmon for 30 seconds. This works better because I don't like to cook the salmon in a sauté pan next to the deep fryer because it makes a mess.

I also left out the tomato because it's too slippery.

I tried making the salmon serving smaller, and also cutting the fillet to half thickness to make it easier to eat as a burger. We'll see how it works later.

It worked great and the 2.0 oz. serving size for just the salmon is fine with the bacon and other sandwich ingredients.

I really liked this preparation and will make it this way again.
I got frozen salmon burgers this time. They're a nice size and only require 5-6 minutes per side in a sauté pan from frozen. One burger is 85 grams (3 oz.) and 150 cal.

Morning prep for dinner.

Cooking in a sauté pan is also handy because it can be used to crisp the bacon and toast the buns at the same time.

Toasted bun, mayo, lettuce, bacon, salmon burger, tomato.
