Balsamic green bean salad
I made a single serving of this for dinner to serve cold as a side with a cheeseburger.
- Fresh French green beans, cut into 1 1/2" long pieces
- Extra virgin olive oil
- Balsamic vinegar
- Dijon mustard
- Red onion
- Grape or cherry tomatoes, halved
- Salt
- Freshly ground black pepper.
Blanch the green beans for 4 minutes, then shock in cold water. Even with thin green beans they were crunchy at 4 minutes, so if you like them softer or they are thick they'll need more time.
Prepare the dressing with olive oil, Balsamic vinegar, and Dijon mustard in a bowl.
Add the onion and tomatoes. Could also add Feta cheese here.
Add the chilled green beans.
