Baby back ribs

I had a craving for baby back ribs. I used to make pork spare ribs from scratch, which are delicious but a lot of work. I just got these pre-made at the supermarket and they were good!

The package said it was 4 servings, but that seems a little small so I made 3 servings, vacuum sealed and froze 2.

If you were hungry, it's probably 2 servings; I could have eaten more!

Mashed potatoes

I also got a package of mashed potatoes from the deli section. They're way less work than making them from scratch as well. Divided into 4 packages of around 4.6 oz.. Vacuum sealed and froze 3 servings.

Corn

I also made a small serving of frozen corn, vacuum sealed to cook in the sous vide with everything else.

Reheating (refrigerated)

To reheat the serving from refrigerated, I cooked both the ribs and the mashed potatoes in the sous vide at 150°F for 1 hour.

Finished the ribs in the broiler for 5 minutes, but this is not really necessary.

3 servings seems about right. Also, cutting them before vacuum sealing makes it easier to just take them out of the sous vide bag and serve!

By pre-cutting the ribs, you can also make more even serving sizes by having each package take one rib from the first, second, and third third of the ribs, since they get smaller left to right.
