Kielbasa kale soup
This is Alton Brown's Christmas Soup recipe.
It's probably one of the best bean soups that I've ever had! However it also reminded me that I don't really like bean soup, so I will not be making this again.
Also the recipe says it makes 4 servings, but I think it's at least 6, if not 8.
- 1 lb. Kielbasa sausage, cut on the bias
- 8 cloves of garlic, minced
- 1 pound red kidney beans (dry, soaked overnight)
- 64 oz. chicken broth
- 1 pound red potatoes, cut into 1/2" cubes
- 6 oz. fresh kale, torn into 1" pieces
- 2 tbsp. red wine vinegar
- 1/2 tsp. freshly ground black pepper
Beans soaking overnight.
6.0 oz. of kale is so much! It's one large bunch, or two medium ones. This is it after removing the hard stems, ripping, washing, and spinning dry.
