Salmon and eggs
I forgot about this meal! It's basically shrimp and eggs stir-fry but made with canned salmon. It was good, I think I like it better than shrimp.
Mom used to make it this way long ago, but switched to shrimp, probably because she thought my nephew would prefer shrimp to canned salmon. It would probably be good with fresh salmon, of course.
I used a 5.0 oz. of canned salmon. I didn't realize this is the weight with the water and it would probably be fine to use a whole can in a single serving. However I already started down the road of splitting it, and the meal does have 2 eggs in it, so half a can is enough, but you could use a whole can.
The rest of the prep is scallions and spinach.
