Chicken prep

I got a package of chicken breast to prepare a few ways. The package was 2.24 lbs and had 3 breasts, around 10.5 oz. each.

I sliced part of two breasts to make grilled chicken sandwiches. Each breast piece was sliced in half to make a thinner piece (left).

I also did the same with a large piece to make cutlets for chicken Parmesan (right), seasoned with salt, freshly ground black pepper, and garlic powder.

These pieces are thin so they did not take long to cook, 2 1/2 minutes per side from refrigerator temperature.

Off the grill and cooling.

Vacuum sealed and frozen for chicken sandwiches.

I made one for lunch today. Since it was just at refrigerator temperature (not frozen), I reheated it in the microwave for 20 seconds.

On a Wildgrain brioche roll.

With lettuce, tomato, and mayo. And a salad with lettuce mix, cucumber, tomato, and ranch dressing.

This was good! I'll definitely make this again.

Chicken Parmesan

Prepare a breading station with flour, egg, and seasoned breadcrumbs. Add a little grated Parmesan cheese to the egg and the breadcrumbs.

Bread the two breast cutlets that have been seasoned with salt, freshly ground black pepper, and garlic powder.

Add 1/4" vegetable oil to a sauté pan and bring to 340°F.

Cook for 1:30 per side.

I did this part ahead, and vacuum sealed and froze one serving.

Plating - Chicken Parmesan

Reheated the vacuum sealed package of chicken in the sous vide for 30 minutes at 160°F from refrigerator temperature. 45 minutes from frozen.

If the marinara is frozen, that can go into the sous vide as well.

Cook the pasta; I used 1.8 oz. spaghetti, cooked for 11 minutes.

Warm 5.0 oz. marinara sauce in a sauté pan. This is more sauce than I usually use for spaghetti alone since I will add some to the chicken.

Transfer the chicken to an oven-safe pan. Add a little Parmesan and mozzarella cheese. Bake for 5 minutes at 350°F.

Using foil is a good idea since the cheese will stick to the pan.

Serve a piece of Wildgrain ciabatta bread with olive oil. Often I add a serving of spaghetti with marinara, but this was a 5.7 oz. serving of chicken and that seemed like too much food.

Burgers

This doesn't have anything to do with the chicken, but since I was grilling anyway I cooked two burgers.

They're just pre-made frozen burgers from the grocery store.

Seasoned with salt, freshly ground black pepper, garlic powder, and cayenne pepper. Sprayed with a little olive oil.

Grilled 2 1/2 minutes per side over high heat.
