What I ate: Monday, April 27, 2026

Breakfast: Kimchi scrambled eggs on a bed of rice.

Prepped for lunch and dinner.

The salmon piece was originally 5.5 oz. which was a little too large. Defrosted the salmon in cold water, cut into two pieces (one small, one normal sized), seasoned, and sautéed. Vacuum sealed and froze the small piece, and vacuum sealed and refrigerated the larger piece for tonight's dinner

Spiced up a jar of kimchi with Mama O's super spicy kimchi paste.

Snack: 1.0 oz. Sriracha chex mix. 0.8 oz. peanuts (136 cal). 0.8 oz. cashews (128 cal).

Lunch: Spicy tuna salad sandwich on Heidelberg French peasant bread. Salad with lettuce mix, cucumber, tomato, carrot, celery, green pepper, red onion, and chipotle ranch dressing (20 grams, 93 cal).

No afternoon snack since I was working outside during snack time.

Dinner: Salmon, broccoli, and rice. 2.9 oz. cooked weight wild Alaskan sockeye salmon. A half glass of Bota box sauvignon blanc.

Weight at beginning of the day: 130.6 lbs. Weight at the beginning of the next day: 129.8 lbs.
