What I ate: Sunday, May 11, 2025

Breakfast: Corned beef hash, eggs and toast.

Prepped for lunch.

Vacuum sealed and froze the rest of the can of black beans.

Snack: 1.0 oz. Sriracha chex mix. 0.8 oz. peanuts (136 cal). 0.8 oz. cashews (128 cal). Skinny Pop cheddar jalapeño popcorn (70 cal).

Cooked 1 1/2 cups of Nishiki white sushi rice and refrigerated for the week.

Lunch: Taco salad with 2.0 oz. taco seasoned ground beef, black beans, lettuce, cucumber, tomato, ranch dressing, and shredded Mexican cheese.

I got a 1.97 lbs. (31.5 oz) package of boneless, skinless chicken thighs. Diced 16 oz. for Curry chicken salad sandwich, cooked in the sous vide for 45 minutes at 160°F. Made 6 servings of around 2.3 oz. each.

Vacuum sealed and froze the rest of the package.

Make 5 servings of 2.0 oz. each Jimmy Dean spicy pork breakfast sausage for Sausage, egg and cheese English muffin.

Vacuum sealed and froze 2 servings of 3.0 oz. each, raw, for Egg roll in a bowl.

Snack: 2.0 oz. Doritos with Bota Box pinor noir. (Twice the amount pictured.)

Dinner: 1 large slice of pepperoni pizza from Gavin's in Sidney, NY. It was vacuum sealed and frozen so I reheated it from frozen in the sous vide at 150°F, then transferred it to a cast iron griddle pan to crisp the crust.

Weight at beginning of the day: 137.6 lbs. Weight at the beginning of the next day: 138.2 lbs.
