What I ate: Saturday, May 31, 2025

Breakfast: Toasted everything bagel and bacon.

Made the filling for an spicy western omelette for Tuesday. And the filling for chorizo breakfast burrito with chorizo, onion, green pepper, jalapeño, and egg for breakfast Wednesday. Froze the serving for next Friday.

Prepped for lunch and dinner.

Defrosted ham and bread for Sunday's breakfast.

Separated out the spinach for Monday's breakfast, Kimchi scrambled eggs.

Cooked 1 1/2 cups of Nishiki white sushi rice and refrigerated for the week.

Snack: 1.0 oz. Sriracha chex mix. 0.8 oz. peanuts (136 cal). 0.8 oz. cashews (128 cal). Skinny Pop cheddar jalapeño popcorn (70 cal).

Lunch: Mackerel and spinach rice bowl #2.

Snack: 1.0 oz. Tortilla chips, queso, tequila.

White Claw grapefruit.

Dinner: Sausage and red pepper stir-fry. Rice. A half glass of Bota Box sauvignon blanc.

Snack: 1.0 oz. mini-pretzels (110 cal).

Weight at beginning of the day: 137.6 lbs. Weight at the beginning of the next day: 138.2 lbs.
